Steamed Carrot Cake

INGREDIENTS

  • 250g butter
  • 130g fine sugar
  • 3 eggs
  • 1 teaspoon vanilla essence
  • 200g raw carrots (finely grated)
  • 80g chocolate chips
  • 30g flour + 1 teaspoon baking powder (sifted together)

INSTRUCTIONS

  1. Heat the steamer. Beat the butter with fine sugar.
  2. Add in vanilla essence and eggs one by one and continue beating.
  3. Add the sifted flour a bit at a time on a low speed of beating until well combined.
  4. Lastly, add in the carrots and chocolate chips.
  5. Steam the cake for about one hour or until the cake is fully cooked.

For the Glaze Icing:

INGREDIENTS

  • 250-350g icing sugar
  • 2-4 tbsp water

INSTRUCTIONS

  1. Sift the icing sugar into a mixing bowl.
  2. Gradually pour the water, one tablespoon at a time, into the bowl – beating continuously until you get a thick, smooth, glossy finish.
