INGREDIENTS
- 250g butter
- 130g fine sugar
- 3 eggs
- 1 teaspoon vanilla essence
- 200g raw carrots (finely grated)
- 80g chocolate chips
- 30g flour + 1 teaspoon baking powder (sifted together)
INSTRUCTIONS
- Heat the steamer. Beat the butter with fine sugar.
- Add in vanilla essence and eggs one by one and continue beating.
- Add the sifted flour a bit at a time on a low speed of beating until well combined.
- Lastly, add in the carrots and chocolate chips.
- Steam the cake for about one hour or until the cake is fully cooked.
For the Glaze Icing:
INGREDIENTS
- 250-350g icing sugar
- 2-4 tbsp water
INSTRUCTIONS
- Sift the icing sugar into a mixing bowl.
- Gradually pour the water, one tablespoon at a time, into the bowl – beating continuously until you get a thick, smooth, glossy finish.
