Simple Pakoras (Deep fried fritters)

 INGREDIENTS

  • 200g besan / flour
  • 1 tsp baking powder
  • 1 tbsp yogurt
  • 2 large potatoes (cut into small pieces)
  • 4 green chilies chopped
  • 2 large red onions  thinly sliced
  • Salt to taste
  • 2 tsp red chilli flakes
  • 1 tsp cumin seeds
  • 2 tsp whole coriander seeds
  • 1 tsp garam masala
  • Some cold water ( ½ cup) to make the paste
  • 4 tbsp chopped fresh green coriander
  • Oil for deep frying

Optional ingredients

  • Spinach
  • Frozen veg – peas – carrots – sweetcorn
  • Cauliflower

METHOD

  1. Combine the flour with all the ingredients except the water.
  2. Gradually mix in some cold water and make a medium consistency paste (Not too thin)
  3. Heat oil  and drop in a tbsp of pakora batter and deep fry until brown and crispy (4-5 mins)

Serve with naan, salad and mint chutney
