SINAMPALUKANG KAMBING (GOAT MEAT IN TAMARIND BROTH)

The hardcore Ilocano way of cooking this dish is with goat’s head and feet. And since these are hard to find. I will cook for goats meat.

INGREDIENTS

  • 2 pounds goat meat w/ bones, cut into pieces
  • 1 large onion, chopped
  • 1 cup young tamarind leaves/tamarind fruits or 1 packet of tamarind powder mix
  • 10 pieces long finger peppers
  • 1 thumb-sized ginger, peeled & sliced into matchsticks
  • 2 stalks celery including leaves, finely chopped
  • 10 cups water
  • Salt or fish sauce to taste

INSTRUCTIONS

  1. In a large pot with water, add the meat, ginger and onions.  Let boil and continue cooking until meat is tender.  Remove impurities that rise to the top.
  2. Season with fish sauce or salt.
  3. Add finger peppers, celery and tamarind leaves/fruits or tamarind powder mix.  Simmer for 15 minutes more.
