Fajita Salad Recipe

INGREDIENTS

  • 1.5 cups romaine lettuce, diced
  • 1 red bell pepper, sliced
  • ½ tomato, sliced
  • Small handful cilantro, chopped
  • ¼ red onion, sliced
  • ¼ cup jicama or singkamas, sliced (optional)
  • ½ an avocado, sliced

Protein Option:

  • Meat Eaters: Grilled chicken or steak
  • Vegan: ¼ cup black beans, drained

Dressing:

  • Juice of 1 lime
  • 2 tbsp olive oil
  • 1 tsp cumin
  • salt & pepper to taste

INSTRUCTIONS

  1. Put romaine, cilantro, bell pepper, onion and jicama into a bowl and set aside.
  2. Mix dressing ingredients and adjust to taste.
  3. Add protein choice and dressing to salad and toss. Top with avocado slices and serve.
