20-Minute Mango Chicken

INGREDIENTS

  • 2 teaspoons olive oil
  • 4 (4-ounce) boneless, chicken
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 2 mangos, peeled and diced
  • 1 green and red bell pepper, chopped
  • 1 cup low-sodium chicken broth
  • 2 green onions, chopped
  • 2 tablespoons chopped nuts
  • 1 tablespoon fresh lime juice
  • 1 teaspoon lime zest
  • 1 teaspoon finely chopped garlic
  • Extra Garnish: cashew nuts and toasted sesame seed (optional)

INSTRUCTIONS

  1. In a large skillet, heat oil on medium-high. Season both sides of chicken with salt and pepper. Add chicken to skillet, and cook for 1 to 2 minutes per side, until golden brown.
  2. Add mangos, bell pepper, broth, green onions, lime juice, lime zest and garlic, and bring to a simmer. Reduce heat to medium. Partially cover, and cook for 5 minutes, until chicken is cooked through. Serve immediately.
