Whisk the following in a mixing bowl:

  • 2 cups of all purpose flour mix with 1/2 teaspoon salt
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda.

Another mixing bowl:

  • melt 3/4 cups of white sugar with 1/4 cup of margarine or butter.
  • 1/2 cup of oil.
  • 3 whole eggs.
  • Mix it well then gradually add 1 tablespoon of lemon juice and 2 tablespoons of grounded cinnamon powder.


  1. Combine dry ingredients together with batter mixture mix it well, then add 2 1/2 cups of small cubes of mango slices. Add 1/2 cup of water. Grease pan.
  2. Preheat oven to 350 degrees F and bake it for  30 to 35 minutes depending upon the type of oven you have. Let it cool before you slice. Enjoy!
