Banana Cake

Makes 24 servings.

INGREDIENTS

  • 2 1/2 cups all-purpose flour
  • 1 2/3 cups sugar
  • 1 1/4 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 large eggs *
  • 2/3 cups vegetable oil
  • 2/3 cups evaporated milk *
  • 2 cups mashed bananas, about 3 to 4 medium-sized ones (add 2-3 tsp. lemon juice to prevent browning)
  • 1 tsp. vanilla extract

PROCEDURE

  1. Preheat the oven to 350 degrees F. Grease and flour a 9 x 13 inch pan. (You can also use a muffin pan to make cupcakes)
  2. Sift together flour, sugar, baking powder, baking soda and salt in a medium bowl. Set aside. In a large bowl, combine eggs, vegetable oil, evaporated milk, bananas and vanilla extract.
  3. Add the dry ingredients to the wet ingredients. Mix till combined. Pour into prepared pan.
  4. Bake for 25-30 minutes until golden brown or until a toothpick inserted in the center comes out clean. Cool completely before cutting and serving.
