Makes 24 servings.
INGREDIENTS
- 2 1/2 cups all-purpose flour
- 1 2/3 cups sugar
- 1 1/4 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 2 large eggs *
- 2/3 cups vegetable oil
- 2/3 cups evaporated milk *
- 2 cups mashed bananas, about 3 to 4 medium-sized ones (add 2-3 tsp. lemon juice to prevent browning)
- 1 tsp. vanilla extract
PROCEDURE
- Preheat the oven to 350 degrees F. Grease and flour a 9 x 13 inch pan. (You can also use a muffin pan to make cupcakes)
- Sift together flour, sugar, baking powder, baking soda and salt in a medium bowl. Set aside. In a large bowl, combine eggs, vegetable oil, evaporated milk, bananas and vanilla extract.
- Add the dry ingredients to the wet ingredients. Mix till combined. Pour into prepared pan.
- Bake for 25-30 minutes until golden brown or until a toothpick inserted in the center comes out clean. Cool completely before cutting and serving.
