Eggplant Omellette (Tortang Talong)

  • 6 eggplants
  • 3 eggs
  • 1/4 cup flour
  • salt and pepper to taste


  1. Grilled the eggplant or boil until it is cooked.
  2. Remove the skin and flatten it. Set aside.
  3. In a bowl beat the eggs, add the flour, salt and pepper, mix will.
  4. Put the eggplant in the mixture, coat it well, and fry it.
  5. Serve it hot.
