Ube Pancakes

  • 1 3/4 cups All Purpose Flour
  • 2 1/2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 1 1/2 cups milk
  • 3 tablespoons cooking oil
  • 5 Tablespoon Ube jam.
    Cooking spray or cooking oil
  • Additional ube jam for topping.
  • Coconut sport (Macapuno) for topping.
  • Margarine
  • Karo syrup (optional)
  • Powdered Sugar (optional)


  1. In a large bowl, combine flour, baking powder, salt, and sugar.
  2. In a separate bowl, lightly beat the egg. Add milk, and oil. Mix until fully combined.
  3. Transfer liquid mixture to the flour mixture. Stir until all ingredients are blended.
  4. Add Ube (purple yam) jam. Mix lightly but leave some clumps in the mixture.
  5. Lightly grease frying pan with cooking spray or cooking oil.
  6. Place pan on medium heat. Pour about 1/4 cup batter onto the pan.
  7. Cook until it starts to bubble. Turn and cook the other side until golden brown.
  8. Spread margarine.
  9. Serve with additional ube jam and macapuno as topping.

Options: Sprinkle powdered sugar or add Karo Syrup
