KALAMAY SA LATIK

INGREDIENTS

  • 2 cups glutinous rice
  • 1 cup coconut milk
  • 1 can jackfruit, drain and cut into strips
  • 1 cup brown sugar

INSTRUCTIONS

To make kalamay:

  1. Combine 2 cups glutinous rice with water to make a soft dough.
  2. Place the mixture in a non-stick round baking dish and steam until cooked, let it cool and cut into bite size, set aside.

To make a simple syrup:

  1. Boil 1 cup brown sugar and 1 cup water then add the stips of jackfruit.

To make latik:

  1. Cook 1 can coconut milk in a medium heat until the liquid starts to thicken and become oily. Lower heat and start to stir regularly to prevent burning and sticking to the pan.
  2. Continue to cook until the solids become golden brown and separates from the oil.
  3. Place kalamay in a dish and pour syrup all over.
  4. Serve warm topped with latik.
